R&D Intern, Food flavors

Aim of the study:

Puratos is a very successful multinational which is active in the chocolate, patisserie and bakery areas.


Over the years, by exploring the world, Puratos has developed its expertise in fermentation and created:

  • SAPORE, a range of sourdoughs provides unique flavors to our bread & viennoiserie ;
  • some ORIGIN CHOCOLATES with a great diversity of sensorial characteristics.


Like wine and beer, sourdough or chocolate is a fascinating world. The diversity of smell and taste that can be naturally generated from grains and seeds or cocoa is endless … for the pleasure of consumers.

Because of their complexity, these food matrices remain kind of mysterious and intriguing for flavor scientists. Indeed, many questions like “Why is this chocolate more nutty than this one?”, “Is this specific yeast systematically generating less creamy/dairy notes?”, “To which extent can a drying process alter the initial sensorial profile of a liquid sourdough?” have not been fully answered yet.

As of September 2019 (or later this year), for a period of 6 months.  


Required qualities/background/education of the student:

Curious, enthusiast, accurate, team player, food lover having a good ability to smell and describe the taste of a product/perfume.

Solid scientific background in food and analytical chemistry (having notions in chromatography, mass spectrometry and olfactometry is a plus).

1 or 2 last years in Bio-engineering, in a Master in (food) sciences/flavor & fragrance/oenology/brewery or being graduated and looking for a “Erasmus+” experience
