R&D Lab Assistant – Sprouted Grains & Soft Grains
Your Mission
As an R&D Lab Assistant – Sprouted Grains & Soft Grains, you provide hands-on support in the development of innovative grain products, from early prototypes to pilot-scale trials. You prepare, process, test and evaluate sprouted and soft grain solutions with a strong focus on taste, texture, quality and reliable execution. Working closely with R&D colleagues and application specialists, you turn product ideas and defined methodologies into well-documented practical results. As your expertise grows, you will take increasing ownership of trials, testing sessions and smaller development activities.
What you will do
- Prepare and execute lab and pilot trials for sprouted grains and soft grains, including recipe preparation, processing, prototyping, sampling and trial set-up.
- Support product and process development by following experimental designs and translating defined procedures and methodologies into consistent hands-on execution.
- Perform practical product measurements such as pH, viscosity and other relevant basic physico-chemical checks, while coordinating more complex analyses with specialized colleagues.
- Evaluate taste, texture and overall product quality through sensory assessments, product panels and structured testing sessions.
- Record, analyze and report trial results clearly and accurately, highlighting observations and supporting conclusions for R&D projects.
- Collaborate with test bakers, R&D colleagues and international stakeholders to test grain solutions in bakery applications and support product samples or implementation activities.
- Contribute to an effective and safe lab environment by organizing materials and samples, following quality and hygiene practices, sharing learnings and helping improve daily ways of working.
Who are we looking for?
- Bachelor’s degree in Food Technology, Food Science, Biosciences, Chemistry, Biochemistry or a related field.
- A hands-on interest in food product development and a good understanding of food-processing principles; experience in a food laboratory or industrial environment is an asset.
- Strong sensory awareness with curiosity for taste and texture and the willingness to evaluate products critically and participate in sensory panels.
- A practical and accurate working style with the ability to follow procedures, learn new methodologies quickly and document results reliably.
- A collaborative mindset and the confidence to work closely with colleagues across R&D, bakery applications, business teams and countries.
- Initiative and curiosity with the courage to think creatively, propose improvements and gradually take ownership of smaller activities.
- Good command of English; Dutch and/or French is an advantage. You are comfortable with occasional physical handling of ingredients and are open to limited international travel when needed.
