Fermentation is strategic for Puratos and employed in different product categories like sourdough, chocolate and fruit. This function has to take care of the data analysis and interpretation of metabolomic data of microbial strains and fermented food products. To gain insights in the microbial physiology of single strains, the microbial communities in fermented food products and the different metabolic pathways and their metabolites involved.
Key Accountabilities
- Characterization of metabolic pathways for a wide range of food microorganisms to gain insights and create linkages between microbes
- Understanding the metabolites associated with food microorganisms metabolic pathways
- Prepare and analyze samples for liquid chromatography mass spectrometry (LC-MS) analysis
- Processing of mass spectrometry data using mass spectrometry dedicated software & tools.
- Perform statistical analysis of complex datasets to aid in biological interpretation of data
- Identification of metabolic pathways based on genome sequences and linking it to identified metabolites
- Metabolomic data management.
- Collaborate in R&D projects across a diverse set of scientific disciplines including fermentation, analytics and computational biology to provide insights and expertise required for successful project progression
- Ensure compliance with safety and quality standards in the laboratory.
- Manage inventory of lab supplies and reagents.
- Participate in team meetings and contribute to project planning and discussions.
Who are we looking for?
- Master Degree in Science (Chemistry, Biology, Biochemistry, Bio-informatics), Bio- and Chemical engineering or related discipline
- Knowledge of food fermentation, microbial metabolic pathways and analytical techniques for food compositions.
- Experience with bio-informatics for analysis of Mass Spectrometry and Genomics data (experience with tools like R, Python,…)
- Data Savvy attitude
- Affinity with bakery, patisserie and chocolate
- Hands-on mentality
- Fluent in written and spoken English.
- Good communication skills (oral & written)
- Strong team spirit to work in cross-functional teams
- Critical thinking and precision
- Aptitude to work independently & in teams
