R&D Technician, Bakery, Patisserie Mixes and Decorations

Pennant Ingredients, located in Rochester, NY. is a subsidiary of Puratos. Pennant is a well-established producer of high-volume bakery mixes and ingredients. Pennant has an immediate opening for a R&D Technician, Bakery and Patisserie Mixes. The R&D Technician will support the development of new products and adaptation of existing products. Successful results will require a passion for baking, a general understanding of food ingredients and their functionality, Good communication skills and the ability to work closely with all team members at the Rochester, NY. Site.

Based at our HQ in Rochester, NY, we are currently seeking an R&D Technician, Bakery and Patisserie Mixes.

Position Type:  Full-Time

Schedule:  Monday - Friday, 8:00 am to 5:00 pm

FLSA Status:  Exempt

Salary: $45k to $50k

Key Accountabilities

  • Support specific projects in close collaboration with R&D Management
    • Support R&D tasks during product development and adaptation process.
    • Conduct analytical and application tests on bakery type products. Including,
      • Bakery Mixes
      • Patisserie Mixes
    • Evaluate new and alternate Raw Materials and compare to standards.
    • Maintain supporting documentation.

 

  • Prepare samples for demonstrations or internal and / or external purposes
    • Ensure analytical correctness.
    • Respect Quality Assurance criteria of samples (traceability, GMP, …).

 

  • Conduct Standardized Performance / Baking / Analytical Tests
    • Fully understand and execute typical bakery food performance and analytical evaluations.
    • Perform tests in lab, on pilot installations and assist in plant trials and initial runs.

 

  • Lab Management
    • Keep work areas clean, orderly, and organized.
    • Maintain fresh stock of frequently used ingredients
    • Request laboratory supplies as needed.
    • Ensure that all equipment and tools are functioning properly.
    • Ensure efficient and respectful use of the R&D equipment and Plant areas.
  • Other Responsibilities
    • Responsible for any other assignments or duties within the scope of the industry as directed by the Supervisor.
    • Demonstrate self-motivation and initiative

 

Knowledge, Skills and Requirements

  • Minimum 2-year degree in Food Science, Chemistry or related field, Nutrition, Food Technology…
  • Experience in bakery food product development or related industry is a plus.
  • Strong verbal and written communication skills, English language
  • Basic Math, understanding and skills
  • ICT: Standard windows, Microsoft Office with proficiency in Excel. An understanding of Genesis is a plus.
  • Ability to compare and distinguish differences in ingredients, materials and overall performance through taste, smell, touch, and visual inspection. (including allergens, wheat, milk, egg, and soy and possibly others)
  • Dexterity to allow the safe and efficient operation of various pieces of equipment including, scales, ovens, fryers, mixers, etc.
  • Able to lift to 50.0 lbs.
  • Able to stand for 6 or more hours during the workday.
